In honor of the Trailing of the Sheep Festival we will be serving Lava Lake Lamb shank with farro, grilled zucchini, roasted eggplant and pistachio mint pesto this weekend. It's fantastic paired with 2007 Luigi Righett Capitel De' Roari Amarone della Valpolicella, or choose from our extensive wine list.

Starting Wednesday, October 5th our fall favorites menu will be available, featuring entree items starting at $12.00, and all pasta dishes are $15.00. We are happy to bring back the popular Pappardelle Tartufo and Carbonara pasta dishes, as well as reintroduce the Veal Scaloppini Marsala Style, Cannelloni and Chicken Milanese.

We’re happy to once again be a part of the Sun Valley Harvest Festival. Festivities begin on Friday evening from 5-7 p.m. with the Harvest Festival Restaurant  Walk.

Start at the Ketchum Town Square before setting off around town to sample 15 local restaurants’ fall offerings and wine pairings. Admission is $25.00 or is included in the Epicurean, Foodie, and Tasting Passes.

Il Naso will serve our deconstructed Italian BLT: local seared pork belly, oregano aioli, local heirloom tomato, butterleaf lettuce and olive oil cracker. Paired with Frenchman’s Gulch Syrah.

If the Wood River Valley had a “Top Chef” competition, Derek Gallegos (owner and chef at three-TEN-main) would surely be the last chef standing. This guy is a lover of food as well as a veritable scientist in the kitchen. Example: Tomato water topped with basil foam in a shot glass. BASIL FOAM??? Seriously? Who comes up with that? One of the most famous chefs in the world—Ferran Adria of elBulli in Spain, that’s who. He’s the guy who earned three stars in the Guide Michelin and is held in high esteem for deconstructing food into tiny bites of wonderment. So when Peter and I headed to Hailey for dinner, we had no idea what three-TEN-main held in store, but we knew we were in for an adventure.

But before I divulge the delicious details of our evening I need to mention an important element that so beautifully influences the menu at three-TEN-main. Chef Derek’s commitment to buying locally is strong and heavily influences his food. The menu changes monthly—...

Hailey — Continuing a favorite community tradition, the Sun Valley Center for the Arts will host an old fashioned ice cream social after the Fourth of July parade in Hailey.

It’s become a summer tradition: walk or bike over to the Sun Valley Center for the Arts, Hailey, for an old fashioned ice cream social after the Fourth of July parade. The Center will be serving free root beer floats made from ice cream donated by Atkinsons’ Markets and root beer by local brewer, Bucksnort Root Beer, from 1 to 3 pm Monday, July 4. The date is also the birthday of Roberta McKercher whose former home is now the Hailey home of the Sun Valley Center for the Arts.

The ice cream social is also a good time to see Geared: An Open Exhibition, which features photos, prints, drawings and small sculptures by local artists on the subject of bicycles. Black and white portraits of locals with their favorite bikes, taken by Dev Khalsa, are also on display.

Announcing the 3rd Annual Idaho’s Bounty Locavore Festival, from April 8th to May 12th, 2011. As part of the Futures Food Group’s dedication of May as Sustainable Food Month, each week will highlight an area restaurant that prioritizes fresh, local food, as they offer a local menu special.
If you're going to go out to eat, please choose the featured restaurant for that week, and let them know you appreciate their prioritization of local, fresh food.

The first week starts Friday April 8th and features a locally made soup and entree at NourishMe. The following week Red Door will offer delicious local fare. Week three will feature local specials at Globus. Ketchum Grill will have local dinners while Glow Live Food Cafe offers local lunch specials in week four. CK’s will complete the festival in week 5. Each menu will be made of the freshest food from local and sustainable growers and producers, including Mike Heath, Fair Mountain Farm, Prairie Sun Farm and more.

Beginning March 1st, Idaho's Bounty, your local food one-stop co-op, will offer $10/year memberships. Individual retail customers as well as all new wholesale accounts (restaurants and more) will have access to the freshest, largest selection of local food through the www.idahosbounty.org web ordering system for this low rate. Founding Idaho's Bounty members who previously paid a one-time $75 membership fee will not pay again; their greatly appreciated support from 2007 to present has helped the Co-op grow by 30% a year. We thank you mightily for helping establish a sustainable local food network.

When the sun rises on Treasured Sunrise Acres, the family in its entirety rolls out of bed ready to work. Ten people in all, Debra Jantzi and her nine children, aged 3 to 25, get busy to make sure Idaho's Bounty customers and others receive quality raw milk. While the three-year-old sits pretty on a tractor driving brother's lap, everyone else hustles to make sure the animals are healthy, bred, milked, fed and tested for the highest dairy standards.

Over 100 goats and just five cows comprise the dairy's milking operation. Most goat milk goes to Boise customers, while Bounty customers are fast catching on to the delights of fresh, raw, cow milk. My own boyfriend downed a pint without blinking an eye; "ahhhhhh" was the only sound he could manage. Jantzi and family come to the dairy business from an experienced hobby history of 4-H projects; when Debra and her children faced the need to provide for themselves independently, they decided to do what they knew and enjoyed the best.

Dining out can be a dieting disaster. Watch out for these danger spots and find out how to steer clear of the fat, salt and sugar that make unhealthy foods so hard to resist.

  1. Cocktails: Order your food first. It’s the first thing you’re offered when you walk into a restaurant. But after just one drink, the inhibitory neurons in our brain start to shut off, and we lose our reason to avoid that 2,400-calorie Bloomin’ Onion. Until you’re placed your food order, stick with sparking water with lime or a splash of cranberry juice. Then toast to your health with one glass of wine.
  2. Waiting: Don’t run on empty. Have a low-calorie snack before you go out so...

Guest bartenders Emily Clemens and Riley Nash will be mixing drinks for their favorite charity The Animal Shelter of the Wood River Valley tonight, Wednesday, Nov. 24th, from 5 PM - 7PM at Cornerstone Bar & Grill (CBG) in Ketchum. 

CBG features guest bartenders each month to raise money for their favorite charity. Emily and RIley will be mixing it up tonight for The Animal Shelter. CBG donates 10 % of the proceeds generated between 5 PM and 7PM to the Animal Shelter. So come on down and mix it up with Emily and Riley. Reservations Now Being Taken!

Evening dining at the historic Roundhouse will make its debut  for Sun Valley’s 75th winter season. This new Sun Valley tradition will begin December 10 offering an upscale, casual dining experience, Thursday through Saturdays, 6 pm to 9 pm mid-way up Bald Mountain at 7,700 ft.

Roundhouse dining will continue through March 27. Full table dinner service may be reserved in Averell’s (for parties up to six), and in the main dining area of the Roundhouse Restaurant. Roundhouse Gondola evening transportation will be reserved for dinner guests only.

Patrons are asked to arrive 15 minutes prior to their scheduled dinner reservation time. Reservations are now being accepted for the winter season. Please call 208-622-2012.
